MW Weekly Meal Planning – Saving Time While Making Better Dinners

Like most moms,  I have a very busy schedule,  but I also like to make great dinners for my family.  In order to do this,  I have to plan.  So every Sunday,  I sit with my schedule and my cookbooks and figure out what days I’ll cook,  what I’ll cook,  and what I’ll need.  I then do most of my shopping on Sunday so I’m set for the week.  It saves me time and it means I don’t have to try and figure out what to make each night.  I plan the whole week in one sitting. My friends are ...

Family Dinner Night – Mint and Cilantro Lamb Skewers, Cripsy Persian Rice, Curried Vegetables

I have a number of friends whose families immigrated from Iran years ago, and one thing is true about all of them.  They know how to cook!  I’ve always loved middle eastern food, but there are a few dishes that are characteristically Persian that are outstanding.  One of them is their Crispy Rice, also known as Polo Tahdig (tah-deeg).  Your family will love the combinations of different flavors, but nothing is too scary.  I served it with these Mint, Cilantro Yogurt Lamb Skewers, which my family thought were one of the best grill meat dishes I’ve served them yet.  And ...

Family Dinner Night – Oven Braised Beef Short Ribs with Creamy Polenta

My husband works late most nights, so we are not fortunate enough to enjoy family dinner every night.  I eat with the kids, but Sean misses the ritual most evenings.  However, we are religious about keeping Sundays and Tuesdays as our family dinner nights.   It is even in our calendar, so that we know never to schedule anything on those nights. For Family Dinner Night I usually try to make a nicer meal than my typical “kids’ dinner” that I often make.  Rarely do I make tacos or chicken cutlets.   In honor of the special evenings I try to whip ...

Make Your Own Pizza Night and a New Favorite 1

Every once in a while we have a ‘make you own pizza’ night dinner and my kids just love it!  I lay out all the basic supplies of mini crusts, pizza sauce, and cheese and the kids do the rest. Typically, they add the standard toppings such as pepperoni, sausage and mushrooms.  When they’re feeling a little wild and crazy in the kitchen, they’ve topped their pizzas with shrimp, chicken, bacon and even some left over mac and cheese. Last night, one of my sons tried a new one, the hot dog pizza.  My other three kids were all over ...

Thanks to iCarly for a Great Dinner Idea 2

If your kids watch iCarly then I’m sure they have heard of this dinner recipe…Spaghetti Tacos.  They rave about them on iCarly and my sister-in-law said my nephew eats them like they are going out of style so, I thought I would give it a try.  It’s very simple, just boil up some spaghetti (it’s easier if you break up the spaghetti before it’s cooked), brown some meat to make meat sauce and then warm up the taco shells.  Put the spaghetti in the shell and spoon on some meat sauce and you’re done.  My kids thought they were in ...

Great Breakfast Recipe for the Kids

I was up early this morning and turned on the TV.  I stumbled upon what looked like a great recipe on one of the food channels…Cinnamon French Toast Bake using  Pillsbury Cinnamon Buns.  I thought to myself, the kids love cinnamon buns, why not give this one a try.  I whipped it up, it was VERY easy and boy they LOVED it.  It was so good that I had to share the recipe. Ingredients - 1/4 cup melted butter;  2 (12.4 ounce) cans Pillsbury refrigerated cinnamom rolls with icing;  6 eggs;  1/2 cup heavy cream;  2 teaspoons vanilla;  1 cup chopped pecans (optional);  ...

Yummy Pumpkin Cookie Recipe:)

With Thanksgiving coming up next week, I wanted to share one of my kids favorite cookie recipes that was handed down from their great grandmother.  Two weeks ago when they saw the cans of pumpkin at the grocery store in the holiday display, they began to beg me to make them.  Each batch makes about 13 dozen cookies and we have made them twice in two weeks (that’s over 300 cookies)!  Right now, I think there may be about 4 cookies left!  I pack them in their lunches as a treat and they’ve allowed their friends to sample them.  Apparently they are ...
