Barbequed Turkey Meatballs with Fresh Corn Salad
BBQed Turkey Meatballs
1 lbs of ground turkey meat
½ c. bread crumbs
½ small onion, chopped fine
1 garlic clove, crushed
1 egg
¼ tsp of oregano
¼ tsp of thyme
½ tsp of salt
¼ tsp of pepper
1 bottle of mild BBQ Sauce
½ c. of chicken broth
Heat oven to 375. Mix all the meatball ingredients together. Form golf ball sized balls. Mix the BBQ sauce with chicken broth. Spoon a little BBQ sauce into the bottom of a rectangular glass baking pan. Place the meatballs ½ inch apart in the pan. Spoon the remaining sauce over the meatballs. Bake meatballs for 30 minutes, until meatballs are cooked thru and the sauce is bubbling. Serve.
Corn Salad
4 ears of fresh corn
1 red pepper, finely diced (about the size of corn kernals)
¼ cup of chopped cilantro
1 jalapeno, seeded and finely diced. (you can reduce or eliminate if you don’t like spicy)
¼ cup of finely chopped red onion
1 Tbsp of lime juice
3 Tbsp of olive oil
Salt and pepper to taste
Cut the corn off the cobs. Mix all salad ingredients. Add lime juice and olive oil. Toss together. Salt and pepper to taste.
