Oven Roasted Vegetables

 2 heads of broccoli, cleaned and cut into pieces

4 medium carrots, peeled and cut into 2 inch long strips

4 Tbsp of Olive Oil

1 tsp of Salt

 

Preheat a broiler and place the oven rack at the highest position.  Mix the vegetables, olive oil and salt in a large bowl.  Spread the vegetables out on a baking sheet. Roast in the oven for 3 to 4 minutes, until starting to brown.  Remove and flip the vegetables over.  Return to the oven and roast for another 2 to 3 minutes.  Serve.
