This is one of my kids’ favorites, but I try not to make it too often because it’s not exactly low-cal.
1 large package ( or two regular packages ) of cheese tortellini
1 package of bacon
2 cups of half and half
1 cup of frozen peas
1 cup of grated Parmesan
Salt
Pepper
Remove the bacon from the package and cut into ¼ inch strips. Fry in a skillet until crisp. Drain and set aside. Remove the frozen peas from the freezer and set aside on the counter to begin thawing.
Bring a pot of water to boil. Add about 1 Tbsp of salt. Add the tortellini and boil until cooked, per the package. Drain and return to the pot. Add the half and half and turn up the heat. Cook for 2 minutes. Remove from heat. Add ½ of the Parmesan and the bacon. Mix well. Stir in the peas and continue stirring gently until the peas are warmed. Add salt and pepper to taste. Serve with a little Parmesan sprinkled on top.
